This is one of those recipes I have made 'forever', I am not quite sure where it came from but I like it! I recently gave it a 'skinny' makeover, to make it even more diet conscience! I also made it 'skinny' to cater to my niece and brother-in-law who have Type 1 Diabetes, this recipe has no added sugar! This simple recipe is delicious, and sure to be a hit at any potluck. The best news is that this recipe boasts only 1 happy Weight Watchers (Points Plus) Point!
Skinny Strawberry Salad
1 (.6 oz) package Sugar Free Strawberry Instant Jell-O1 (1 oz) package Sugar Free Fat Free Instant Chessecake Jell-O pudding
2 TBS instant tapioca
3 cups water
8 oz container Free Cool Whip
2 cups Strawberries Chopped
In a sauce pan, bring the 3 cups of water to a boil. Whisk the dry packages of Strawberry Jell-O, Cheesecake Jell-O, and the tapioca together. Add the Jell-O mixture to the boiling water, and let boil for 1 minute. Place mixture in bowl, and let sit in refrigerator over night or at least 4 hours. When mixture has set, fold in the cool whip. After the cool whip is incorporated, fold in the chopped strawberries!
1/8 of this recipe (about 3/4 cup) = 1 WW point!
I like to make this recipe in the winter as well, except I substitute orange Jell-O for the Strawberry Jell-O, and canned mandarin oranges for the fresh strawberries!

ReplyDeleteLooks great! Is there a substitute for the instant tapioca? I am trying to limit my starches, and am wondering if chia seeds would accomplish this? Well, the black tapioca would make it all speckled, LOL!
