This recipe comes from my sweet Great Grandmother. Her family came from Denmark, this is a family favorite that she passed down to her children and great grandchildren (now it is being passed to her great great grandchildren). Aebleskiver, in denmark refers to apples (aebles, I think) because originally they had apple slices in them, my Great Grandmother used to sometimes put applesauce in the middle. We usually do not do the apple slices in them now, but you could! An Aebleskivers is essentially a tennis ball shaped pancake/waffle delicacy that can be eaten for any meal.... or in between... their is really no bad time to eat an Aebleskiver!
You do need one special piece of equipment to make this dish. An Aebleskiver pan, they are usually cast iron, and you can pick them up at specialty kitchen stores, or on the web.
Aebleskivers
2 egg whites
2 cups flour
1 Tablespoon white sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
4 Tablespoons butter melted
2 cups buttermilk
Shortening for Aebleskiver pan
Start by heating up your Aebleskiver pan, it will work best on a gas range stovetop, glass top stovetops, will not will work with a cast iron pan.
While that is heating up, beat your egg whites until stiff peaks form. Set aside.
Beat remaining ingredients together (except the shortening). Fold in egg whites.
Using a knife put a small amount of shortening in each Aebleskiver mold.
Scoop in dough until it almost fills each mold.
Bubbles will appear around the Aebleskiver when it is ready to turn.
Turn the Aebleskiver, you can use a fork, a kabob stick, or a knitting needle!
Let cook on the reverse side, then remove from plate.
Enjoy! Aebleskivers are delicious, traditional, and fun! Sometimes recipes are more than just food, they are thousands of memories whipped up into one delicious bites, this is one for me. I hope that someday my great great grandchildren will enjoy this recipe too!
