Porcupine Meatballs {3 ingredient fabulous!}

Porcupine meatballs were a family staple growing up, we all got so excited on Porcupine Meatball night! Now I share this full-proof recipe with my own family! These meatballs are super flavorful, and with only three ingredients it makes dinner pretty fabulous!
Ingredients:
1 pound hamburger (raw)
1 box beef flavored Rice-a-Roni (uncooked)
1 egg
2 cups Water
Step 1: Warm up a frying pan, medium heat on stovetop, add a little bit {approx 1 TBS} of oil to pan.
Step 2: Mix all ingredients thoroughly, EXCEPT seasoning package included in Rice-a-Roni. Form into balls, I like mine just bigger than a golf ball.
Step 3: Brown meat balls on all sides on stove top.
Step 4: Mix seasoning packet with two cups of water. Pour over browned meatballs in frying pan. The water mixture should almost cover the entire meatball (you may need to add more water if it does not cover the meatballs). Bring to a boil, simmer about 20-25 minutes, turning occasionally, until all liquid is gone. There you have it!
Porcupine meatballs are terrific with mashed potatoes!

Freezer Adaption: It probably comes as no shock that I double or triple this recipe, and freeze some for later. I simply freeze the finished meatballs in a zip top bag. When I want to eat, I simply thaw and reheat! Meatballs freeze great!

  4. I'm sure they are very tasty, but why would you serve potatoes, when they already contain rice? Seems a bit heavy on the starch.....except, now I'm hungry! Michele

  5. Good question Michele, I like it with potatoes probably because that is the way I have always had it. It is a little like meatloaf, even thought it has some starch in it, it is great with meatballs! Thanks for all of the comments!

  10. I have never heard of these. I have to admit... this is one of those things that seems really weird to me, but it's probably so delicious. I know my kids would probably love these. I love how the carb and meat are all mixed up. It' makes dinner-time so easy.

    I am laughing because I remember making meatballs with rice when the kids were younger and it was some long convoluted recipe
