I had so much fun making these.... and the fun started at the grocery store. Keep in mind, I live in a really small town, and I go to the local grocery store.. I could not find Mint Extract anywhere at the store, so I finally went to the cash register and asked the clerk if they had any.. To my surprise she said "oh yes, we do but we keep it LOCKED UP at costumer service in the controlled substance cabinet." With an appraising look, she asks, "Do you still want it?" Really, Mint Extract? I know there is not much to do in a small town but if high school kids are trying to get drunk off this we are in trouble!... So if you find these cupcakes to be super delish, and slightly addicting, I might know why!
Items Needed
Devil's Food Cake Mix (Mixed as directed on the back of the box)
White Cake Mix (Mixed as directed on the back of the box)
1 1/2 tsp Mint Extract
Green Food Coloring
Frosting
3/4 cup margarine or butter
4 cups powdered sugar
1 TBSP of milk or until it reaches desired consistency
1 tsp vanilla
1/2 tsp mint extract
Green Food Coloring
Girl Scouts Thin Mint Cookies to Decorate!
First, mix separately the Devil's Food Cake Mix, and then the White Cake Mix as directed on the box. To the White Cake Mix batter add, 1 1/2 tsp of Mint Extract, and green food coloring.
Bake as directed on the box for cupcakes.
Frosting
Combine butter and powder sugared, then add the rest of the ingredients. I like to use my frosting tube to decorate with, it is from Pampered Chef.

The results... YUMMY, and you will have tons to share with friends... or perhaps sell to high school students looking for a Mint Extract fix!

I will have to try these cookies, they sound great. I don't have any of the cookies but I do have and thought of sprinkling on top are the Andies Mini mint Chips. (I am not sure what they are called exactly.)

ReplyDeleteThanks for the recipe! Made these for a work party yesterday and they were a HUGE hit! One word of caution to others wanting to make them...be careful how much milk you add to the frosting..mine was runny at first. Also, I chopped the cookies in half for the top (some broke while doing so) so I chopped them into smaller pieces and sprinkled on top! Thanks again!
