I will be the FIRST to admit, I am ready for some warm weather! This is a great EASY dinner, that brings my mind back to warmer times. I am sure most of you have had Haystacks, but if not, it is a must try!
Step 1: Cook Rice
2 cups rice (uncooked)
Step 2: Make Sauce
2 cups cooked and cubed chicken
2 cans of Campbell's Cream of Chicken soup
1 cup chicken broth.
Combine cream of chicken soup and chicken broth in a saucepan. Combine thoroughly and add chicken. Let heat through.
Step 3: Toppings
Shredded Cheese
Toasted Slivered almonds
Water Chestnuts, sliced
Green Pepper
Green Onion
Tomatoes
Can of Pineapple Chunks
Shredded Coconut
Chinese Noodles
Put a scoop of rice on your plate cover with your chicken, and top it anyway you like it! I love these so much! This is a fun recipe to serve a crowd, make it easier on yourself and have everyone bring a topping!
Freezer Adaption: This makes a lot of sauce, more then we can eat if I am just feeding my family, so I freeze half of the sauce in a zip-top bag, and it is ready for next time!

ReplyDeleteI LOVE Hawaiian Haystacks!!! So yummy. I use cream of chicken soup, never thought to use cream of mushroom...I will have to give it a try! Now I'm hungry ;-)
